Lamination: This recipe is calibrated for a classic poolish starter, followed by one single fold and one double fold (book fold). Rest the dough in the freezer for 15 minutes between folds to keep the gluten relaxed and the butter block perfectly solid.

The Proof: Proof strictly at 24°C to 26°C for roughly 2.5 hours. Anything higher will melt your hard work right out of the pastry before it ever hits the oven.
