This is the baseline against which serious bakers are measured. It cannot be rushed; it requires slowing down to let temperature and time interact. If your kitchen is too warm, the butter bleeds and turns the dough cakey; if you rush the final proof, the layers tear instead of expanding into delicate, gossamer sheets.

Artisanal Classic Croissants

Ingredients

500g
unbleached bread flour

granulated sugar

instant yeast

cold whole milk

premium unsalted butter (82% fat content)

Method

Prepare the Dough
Mix flour, sugar, salt, yeast, and cold milk until a shaggy dough forms. Knead for 5 minutes until smooth, shape into a flat disc, wrap in plastic, and chill overnight.
Roll the Butter Block
Place the cold butter between two sheets of parchment paper. Pound and roll it into a precise 20x20 cm square. Chill until firm but still pliable.
Lamination (Turns)
Roll the chilled dough into a 20x40 cm rectangle. Place the butter block in the center, fold the dough over to enclose it, and perform three consecutive envelope folds, chilling 30 minutes between each turn.
Shape and Bake
Roll laminated dough to 4mm thick. Cut into elongated triangles, roll tightly from base to tip, and proof for 2 hours. Brush with egg wash and bake at 200°C for 20 minutes until deeply golden.

Chef's note

  • The Butter: Use an unsalted dry butter (82% to 84% butterfat minimum). Standard grocery store butter contains too much water, which turns to steam and ruins the structural lamination layers.

  • Lamination: This recipe is calibrated for a classic poolish starter, followed by one single fold and one double fold (book fold). Rest the dough in the freezer for 15 minutes between folds to keep the gluten relaxed and the butter block perfectly solid.

  • The Proof: Proof strictly at 24°C to 26°C for roughly 2.5 hours. Anything higher will melt your hard work right out of the pastry before it ever hits the oven.
